老妈这一锅鱼头炉真材实料,用的鱼头是红哥厘,但却不是新加坡人称的红哥厘,这鱼的肉质较鲜嫩。

这是客家孕妇坐月吃的‘鸡酒“, 用的是糯米酒,加进炒过的碎姜,是老妈的拿手好菜之一,也是我心头所好之一。

这碗炸鱼肉汤的味道与别的稍微不同,有咸菜的酸,微辣,没上两次好吃,仍算不错。

这里的牛腩面与柔佛再也Johor Jaya 的斑兰牛肉面不一样味道,各有所长,在后者最近偷工减料下,前者就理所当然地成为我的最爱咯。浓浓的牛骨熬出的汤底,所有精华尽在这一片白萝卜里,是老妈特别跟摊主讨的。

以上是师傅煮的,以下是徒弟的版本。

师傅曾经将版权卖给两位徒弟,约法三章,前者十年内不能再关丹经营同样的生意。
我们都觉得前者吃坏了脑袋,哪有教人之后,反将自己反锁,而且所受的版权或教学费用,听说是那区区的马币两万五一个。
十年一晃,师傅重出江湖,仍然宝刀未老,下注材料,尽将往日顾客召回。
如果没吃过师傅的版本,徒弟的足以撑得住半片天,原因是这味道不是在外头所能吃到的。
一比之下,就能吃出徒弟的汤底加入了较多的黑酱油,味道不纯,师傅却说他们不舍得下足材料,想必是师傅在教之余,仍留有一手。:)))

这碗林明式的干捞面,不输给以上的,老妈说白的更纯正,原汁原味。下次要试一试。
